- 1/2 cup Freshly Grated Mozzarella Cheese
- 2 tablespoons Italian Seasoning
- 2 Large Eggs
Batter:
- 1 1/2 cups Italian Bread Crumbs or Panko
- 2 tablespoons Olive Oil
- 1/2 cup Finely Grated Parmesan
- 2 Large Eggs
Air Fryer Cooking Method:

Pan-Fried Cooking Method:
- Canola Oil

Instructions
- Noodle Prep: Boil lasagna noodles until al dente, rinse and trim. Mix egg, cheeses, and seasoning. Spread cheese mixture on noodles, roll, and freeze.
- Batter: Scramble egg, mix oil, breadcrumbs, and Parmesan. Dip rolled lasagna in egg, then breadcrumbs.
- Air Fryer Cooking Method: Spray basket with oil, place lasagna frittas, spray tops with oil. Cook at 400°F for 8 mins, flip, cook 6-8 mins more until crispy. Serve with sauces.
