Bars:
- 1/2 cup oil
- 2 eggs, beaten
- 2 tablespoons lemon juice
- 1/2 teaspoon coconut extract
- 1/2 teaspoon vanilla extract
- 2 1/2 cups flour
- 1 3/4 cup sugar
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 20 oz. can crushed pineapple, undrained (three tablespoons set aside for the frosting)
Cream Cheese Frosting:
- 1/2 cup butter, softened
- 4 oz. cream cheese, softened
- 3 tablespoons crushed pineapple
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon coconut extract
- 3 cups powdered sugar
- 1 cup walnuts (optional)
- 1 cup sweetened flaked coconut
Instructions
- Preheat oven and prepare pan: Preheat the oven to 350°F and grease a sheet pan with edges.
- Mix wet ingredients: In a large bowl, combine oil, beaten eggs, lemon juice, coconut extract, and vanilla extract.
- Combine dry ingredients: In another bowl, mix flour, sugar, salt, and baking soda.
- Blend wet and dry ingredients: Add the dry ingredients to the wet mixture and fold in the undrained pineapple.
- Bake: Pour the batter into the prepared pan and bake for 25-30 minutes.
- Make the frosting: Beat together butter and cream cheese, then add pineapple, vanilla extract, coconut extract, and powdered sugar.
- Toast coconut and walnuts: Toast in a skillet over medium heat.
- Frost the bars: Once cooled, frost the bars and top with toasted coconut and walnuts.
Notes
- For added crunch, sprinkle some chopped walnuts on top of the cream cheese frosting.
- These bars are best served chilled, allowing the flavors to meld together.
