Description

These Amish Pineapple Bars are a delightful treat that perfectly blend the tropical flavors of pineapple and coconut with a rich cream cheese frosting. Easy to make and bursting with flavor, these bars are sure to become a favorite for any occasion.


Ingredients

Bars:

  • 1/2 cup oil
  • 2 eggs, beaten
  • 2 tablespoons lemon juice
  • 1/2 teaspoon coconut extract
  • 1/2 teaspoon vanilla extract
  • 2 1/2 cups flour
  • 1 3/4 cup sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 20 oz. can crushed pineapple, undrained (three tablespoons set aside for the frosting)

Cream Cheese Frosting:

  • 1/2 cup butter, softened
  • 4 oz. cream cheese, softened
  • 3 tablespoons crushed pineapple
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon coconut extract
  • 3 cups powdered sugar
  • 1 cup walnuts (optional)
  • 1 cup sweetened flaked coconut

Instructions

  1. Preheat oven and prepare pan: Preheat the oven to 350°F and grease a sheet pan with edges.
  2. Mix wet ingredients: In a large bowl, combine oil, beaten eggs, lemon juice, coconut extract, and vanilla extract.
  3. Combine dry ingredients: In another bowl, mix flour, sugar, salt, and baking soda.
  4. Blend wet and dry ingredients: Add the dry ingredients to the wet mixture and fold in the undrained pineapple.
  5. Bake: Pour the batter into the prepared pan and bake for 25-30 minutes.
  6. Make the frosting: Beat together butter and cream cheese, then add pineapple, vanilla extract, coconut extract, and powdered sugar.
  7. Toast coconut and walnuts: Toast in a skillet over medium heat.
  8. Frost the bars: Once cooled, frost the bars and top with toasted coconut and walnuts.

Notes

  • For added crunch, sprinkle some chopped walnuts on top of the cream cheese frosting.
  • These bars are best served chilled, allowing the flavors to meld together.
