Description

A visually stunning and delicious appetizer, the Antipasto Wreath combines a variety of fresh mozzarella, cured meats, olives, cherry tomatoes, and artichoke hearts artfully arranged on skewers to create a festive wreath perfect for any gathering or celebration.

Ingredients

Scale

Cheeses

  • 8 oz mozzarella balls

Meats

  • 6 oz spicy Genoa salami
  • 6 oz prosciutto salami

Vegetables & Olives

  • 1 pint cherry tomatoes
  • 14 oz artichoke hearts
  • 8 oz green olives (Pitted Italian Castelvetrano olives – 1 jar)
  • 8 oz pitted Kalamata olives (1 jar)
  • 8 oz pepperoncini (8-16 oz)
  • Basil leaves (as needed)
  • Rosemary sprigs (for garnish)

Instructions

  1. Prepare the skewers: Gather 4-inch skewers and start assembling by mixing and matching ingredients. Thread one mozzarella ball, one basil leaf, one olive, a piece of your choice of vegetable (such as cherry tomato or artichoke heart), and one slice of either spicy Genoa salami or prosciutto salami onto each skewer to create a harmonious flavor balance.
  2. Arrange the wreath: Lay a large circular serving platter or cutting board on a flat surface. Arrange and layer the completed skewers closely around the platter in a circular wreath shape, ensuring the skewers are visually appealing and balanced.
  3. Garnish: Tuck rosemary sprigs carefully around and between the skewers on the wreath to add a festive and aromatic finishing touch.

Notes

  • Nutrition facts will vary depending on the exact proportions and ingredients used on each skewer.
  • Feel free to customize the skewers by adding stuffed olives, tortellini, stuffed peppers, marinated mushrooms, or pickled vegetables.
  • To vary the taste, use different cured meats such as pancetta, Coppa, soppressata, dry cured salami, prosciutto, or pepperoni.
  • You can also include cubed Parmesan cheese on some skewers for a cheese variety.
