- 3 tablespoons almond butter or cashew butter, or seed butter of choice
- ½ tablespoon maple syrup
- 2 tablespoons chocolate chips
- ½ teaspoon coconut oil
Instructions
- Prepare the Apple Slices: Cut the apple into ¼-inch thick slices and core each slice. Typically, you will get 3-4 slices from one apple.
- Make the Coconut Nut Butter Mixture: In a bowl, combine the shredded coconut, almond (or chosen) butter, and maple syrup. Mix thoroughly until the ingredients are fully blended and form a uniform mixture.
- Assemble the Topping: Spoon the coconut and nut butter mixture onto the top of each apple slice. Place the topped apple slices on parchment paper lined surface in preparation for chocolate drizzle.
- Melt Chocolate and Drizzle: Melt the chocolate chips together with the coconut oil using a microwave or double boiler until smooth. Drizzle the melted chocolate over each apple slice evenly.
- Chill Until Firm: Place the assembled apple samoas into the freezer and chill for about 5 to 10 minutes, or until the chocolate has set and the toppings are firm. Remove and enjoy immediately or store for later.
Notes
- Storage: Store leftovers in an airtight container in the refrigerator for 2-3 days. Note that the apples may soften and lose some crunch but will remain tasty.
- Freezing: To freeze, place the assembled apple slices on a baking sheet in the freezer until solid. Once frozen, transfer them to a freezer-safe bag and store for up to 1 month. Allow thawing for a few minutes before eating.
