Instructions
- Preheat the oven: Preheat your oven to 180°C/350°F (all oven types) to prepare for baking the brie evenly.
- Prepare the brie: Unwrap the brie and place it in a small, shallow ovenproof dish slightly larger than the cheese or set it on a piece of crumbled baking/parchment paper for easy transfer later.
- Bake the brie: Bake the brie in the preheated oven. For 250g (8 oz) brie, bake for 15 to 20 minutes until the center feels very soft and almost ready to collapse with gentle pressure. For a 500g (1 lb) brie, increase baking time to around 25 minutes.
- Alternative microwave option: Heat the brie on high power in the microwave for two minutes in 30-second increments to melt the cheese thoroughly.
- Transfer carefully: If baked on parchment paper, carefully transfer the brie to a serving plate or board, as the cheese will be very delicate and soft.
- Add toppings: Drizzle the melted brie with honey or maple syrup and garnish with a sprig of thyme if desired.
- Serve immediately: Serve the warm baked brie with crostini or crackers on the side. Provide a knife to cut through the rind and a cheese or pate knife to scoop the gooey cheese onto the crostini.

- Use economical brie or camembert for this recipe; higher-end cheese is best enjoyed unaltered.
- Use a shallow ovenproof dish to prevent cheese from oozing out and to allow safe scooping.
- Check doneness by gently touching the center of the brie or using a skewer to ensure it’s melted inside.
