Instructions
- Gather all ingredients. Place all ingredients in separate glass bowls to organize before cooking.
- Preheat oven. Set your oven to 350°F (175°C) and spray a 9×13-inch baking dish with cooking spray.
- Cook the ground beef. Heat a large skillet over medium-high heat. Add the ground beef and cook, stirring occasionally, until browned and crumbly, about 8-10 minutes.
- Make the beef mixture. Stir in the salsa, reduce heat to medium-low, and simmer until the liquid is mostly absorbed, approximately 20 minutes. Add the drained beans and cook until heated through, about 5 minutes.
- Assemble the casserole. Spread crushed tortilla chips evenly over the bottom of the prepared baking dish. Spoon the cooked beef mixture over the chips. Dollop sour cream on top of the beef mixture, then sprinkle with sliced black olives, chopped green onions, and chopped tomatoes. Finish by evenly sprinkling shredded Cheddar cheese over everything.
- Bake the casserole. Place the assembled dish in the preheated oven and bake for about 30 minutes, until the cheese is melted and bubbly.
