Instructions
- Preheat and Prepare Tater Tots: Preheat the oven to 400°F (204°C). Place the frozen tater tots on a baking sheet and start baking them while preparing the rest of the ingredients to ensure they get crispy.
- Cook Sausage and Vegetables: In a skillet over medium heat, cook the breakfast sausage along with the diced onion and green bell pepper until the sausage is browned and vegetables are softened. Drain excess grease from the skillet, then remove from heat and let the mixture cool slightly.
- Mix Eggs and Seasonings: In a large bowl, whisk together the eggs, whole milk (or chosen dairy substitute), all-purpose seasoning blend, black pepper, and optional Cajun seasoning until combined and smooth.
- Combine Sausage Mixture and Eggs: Grease your casserole baking dish thoroughly. Add the cooked sausage mixture, half of the crumbled bacon, the egg mixture, and 2 cups of shredded cheese to the dish. Mix well to combine all ingredients evenly.
- Layer the Casserole: Sprinkle 1½ cups of shredded cheese evenly over the mixture. Arrange the partially baked tater tots on top in a single layer. Then, sprinkle the remaining half of the crumbled bacon and finally the last ½ cup of shredded cheese over the tater tots.
