Ingredients
Main Ingredients:
- 1 head of cauliflower, cut into small florets
- 3 garlic cloves
Additional Ingredients:
- 3 tablespoons unsalted butter, plus extra melted butter for garnish
- 2 tablespoons parmesan, finely grated
- 3 tablespoons sour cream
- 1/2 cup goat cheese
- 1 tablespoon fresh chives, minced
- Kosher salt and freshly cracked black pepper, to taste
Instructions
- Prepare Cauliflower: Boil cauliflower and garlic until tender.
- Blend Ingredients: Puree cauliflower with butter, parmesan, sour cream, goat cheese, salt, and pepper.
- Finish and Serve: Garnish with melted butter and chives.
Bring a pot of lightly salted water to a boil, then add the cauliflower and garlic cloves. Boil for 10 – 12 minutes or until cauliflower is easy to smash with a fork.
Drain cauliflower and transfer to a food processor, then add butter, parmesan, sour cream, goat cheese, a pinch of salt, and pepper. Puree the cauliflower until it resembles a creamy mashed potato, then taste for seasoning. Adjust if necessary, then transfer to a serving bowl.
Make swooshes in the bowl, then drizzle with melted butter and top with fresh chives.
