Description

Creamy and flavorful, this Cheesy Cauliflower Mash is a delicious low-carb alternative to traditional mashed potatoes. With the richness of goat cheese and parmesan, it’s a comforting side dish perfect for any meal.

Main Ingredients:

  • 1 head of cauliflower, cut into small florets
  • 3 garlic cloves

Additional Ingredients:

  • 3 tablespoons unsalted butter, plus extra melted butter for garnish
  • 2 tablespoons parmesan, finely grated
  • 3 tablespoons sour cream
  • 1/2 cup goat cheese
  • 1 tablespoon fresh chives, minced
  • Kosher salt and freshly cracked black pepper, to taste

Instructions

  1. Prepare Cauliflower: Boil cauliflower and garlic until tender.
  2. Bring a pot of lightly salted water to a boil, then add the cauliflower and garlic cloves. Boil for 10 – 12 minutes or until cauliflower is easy to smash with a fork.

  3. Blend Ingredients: Puree cauliflower with butter, parmesan, sour cream, goat cheese, salt, and pepper.
  4. Drain cauliflower and transfer to a food processor, then add butter, parmesan, sour cream, goat cheese, a pinch of salt, and pepper. Puree the cauliflower until it resembles a creamy mashed potato, then taste for seasoning. Adjust if necessary, then transfer to a serving bowl.

  5. Finish and Serve: Garnish with melted butter and chives.
  6. Make swooshes in the bowl, then drizzle with melted butter and top with fresh chives.
