Description

A hearty and flavorful skillet dish featuring tender boiled potatoes, smoky sausage, caramelized onions, and melted sharp cheddar cheese. Perfect for breakfast, lunch, or dinner, this Cheesy Smoked Sausage and Potatoes Skillet combines simple ingredients with easy stovetop cooking for a satisfying, comforting meal.

Ingredients

Units Scale

Vegetables & Sausage

  • 2 lbs Yellow Potatoes, sliced into thin rounds (skin-on or peeled, your choice)
  • 1 Yellow Onion, diced
  • 14 oz Package of Smoked Sausage, sliced

Seasonings & Oils

  • 1 tbsp Chicken Flavored Bouillon
  • 1 tsp Garlic Powder
  • 1/2 tsp Black Pepper
  • 1 tbsp All Purpose Seasoning (such as "The Usual" from Fire and Smoke Society)
  • 1 tbsp Neutral Oil (avocado or canola oil recommended)
  • 2 tbsp Bacon Grease (or oil or butter, as substitute)

Cheese

  • 4 oz Freshly Grated Sharp Cheddar Cheese (or any cheese you prefer)

Instructions

  1. Boil Potatoes: Bring a large pot of water to a boil over high heat. Stir in the chicken-flavored bouillon until dissolved to season the water. Add the sliced potatoes and boil for 5 minutes until they are just slightly tender but not fully cooked. Drain the potatoes and set aside.
  2. Cook Sausage and Onions: While the potatoes are boiling, heat 1 tablespoon of neutral oil in a large skillet over medium heat. Add the sliced smoked sausage and diced onion to the skillet. Cook them for about 6 to 8 minutes, stirring occasionally, until the sausage is browned and the onions are soft and caramelized. Transfer the mixture to a plate and set aside.
  3. Fry Potatoes: Using the same skillet, melt 2 tablespoons of bacon grease over medium heat. Add the drained potatoes to the skillet and season with the all-purpose seasoning blend, garlic powder, and black pepper. Cook the potatoes for approximately 20 minutes, stirring only occasionally to allow them to crisp up nicely and develop a golden brown crust.
  4. Combine and Melt Cheese: Once the potatoes are cooked to your liking and crispy, return the cooked sausage and caramelized onions to the skillet. Stir everything together gently to combine the flavors. Evenly sprinkle the freshly grated sharp cheddar cheese over the top of the mixture. Cover the skillet with a lid and cook for a few minutes until the cheese has melted thoroughly.
  5. Serve: Remove from heat and serve hot, enjoying the rich combination of smoky sausage, crispy potatoes, sweet onions, and melted cheese.

Notes

  • You can peel the potatoes or leave the skin on depending on your texture preference.
  • Substitute bacon grease with butter or oil if preferred, though bacon grease adds extra smoky flavor.
  • Adjust seasoning quantities to taste, especially salt since bouillon can be salty.
  • Use any cheese you prefer if sharp cheddar is not available—smoked gouda or pepper jack are great options.
  • For extra crispiness, avoid stirring the potatoes too often during frying.
  • This dish can be reheated well and serves great as leftovers.
