Ingredients

Scale

Potatoes

  • 4 medium/large potatoes, washed and cut into cubes
  • Olive oil, to coat
  • Salt, to taste
  • Pepper, to taste
  • Garlic powder, to taste
  • Paprika, to taste (about 1 tsp)

Chicken

  • 2 chicken breasts, cut into cubes
  • 1 tbsp dry ranch seasoning
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp paprika

Bacon & Cheese

  • 6 strips of bacon, chopped
  • 1 cup shredded mozzarella cheese

Additional

  • Ranch dressing, for topping

Instructions

  1. Prepare Potatoes: Wash and cube the potatoes. Toss them in a bowl with olive oil, salt, pepper, garlic powder, and paprika to evenly coat.
  2. Cook Potatoes: Air fry the seasoned potatoes at 400°F (204°C) for 20-25 minutes, shaking the basket a couple of times during cooking to ensure even crisping.
  3. Cook Bacon: While the potatoes cook, chop the bacon strips. Cook them in a skillet over medium-high heat until crisp. Remove bacon from the pan, leaving 2 tablespoons of bacon grease in the skillet.
  4. Cook Chicken: Add cubed chicken to the hot skillet with bacon grease. Season with salt, pepper, paprika, and ranch seasoning. Cook until chicken is fully cooked through, then remove pan from heat.
  5. Combine Ingredients: When potatoes are done, add them to the skillet with chicken. Stir everything together well.
  6. Add Cheese and Bacon: Sprinkle shredded mozzarella over the top and then add the cooked bacon pieces.
  7. Melt Cheese: Broil the skillet in the oven for a few minutes until the cheese melts. Alternatively, cover the skillet with a lid on the stove and let it sit until cheese is melted.
  8. Serve: Plate the skillet mixture and drizzle with ranch dressing to taste. Enjoy your flavorful Chicken Bacon Ranch Potato Skillet!

Notes

  • Adjust seasoning on potatoes according to preference since measurements aren’t exact.
  • If you don’t have an air fryer, you can roast the potatoes in the oven at 425°F for about 30-35 minutes, turning occasionally.
  • Use full-fat ranch seasoning and dressing for the richest flavor.
  • Broiling to melt the cheese adds a nice golden finish, but covering on stove works well if broiler is unavailable.
