Ingredients
Scale
Filo Pastry
- 6 sheets frozen filo pastry, thawed
- 50 g butter, melted
Filling
- 250 g brie, cut into long slices
- 275 g cranberry sauce
- ¼ cup flaked almonds
Topping
- 1 tablespoon black sesame seeds
Instructions
- Preheat Oven and Prepare Trays: Preheat your oven to 180°C (350°F). Line two baking trays with parchment paper and set aside for later use.
- Cut Filo Pastry Sheets: Lay the thawed filo sheets flat on a clean, dry surface. Cut each sheet lengthwise into 3 strips, then cut each strip in half widthwise to make 36 squares total. Keep unused sheets covered with a damp towel to prevent drying out.
- Assemble Crackers: Take one filo square and brush it generously with melted butter. Place a slice of brie, 1 teaspoon of cranberry sauce, and 1 teaspoon of flaked almonds at one end of the square. Carefully roll up the pastry from the filled end, then pinch both ends to form a cracker shape. Repeat until all squares are filled and rolled.
- Prepare for Baking: Arrange the assembled filo crackers on the lined baking trays. Brush the tops with the remaining melted butter. Sprinkle black sesame seeds evenly over the crackers for extra flavor and crunch.
- Bake: Place the trays in the preheated oven and bake for 15-20 minutes, or until the crackers are golden brown and crisp.
- Garnish and Serve: Remove crackers from the oven. Garnish with fresh rosemary leaves or chopped chives as desired. Serve warm or at room temperature as festive finger food.
Notes
- Filo pastry sheets are delicate and may tear or leak during baking. To prevent filling from escaping, try using two layers of buttered filo sheets per cracker.
- Ensure your work surface is completely dry and avoid wet hands to keep filo sheets intact.
- These crackers are best enjoyed fresh but can be stored airtight and gently reheated before serving.
