- 4 leeks sliced or 2 medium/large onions diced
- 6 medium-sized potatoes (about 6 cups diced)
- 6 cups broth (chicken or vegetable)
- 1 8oz block cream cheese
- Olive oil

Instructions
- Sauté Aromatics: In a large Dutch oven or stockpot, heat some olive oil over medium heat. Add the sliced leeks or diced onions and cook until they are soft and just beginning to brown, seasoning with salt and pepper to enhance the flavor.
- Add Potatoes and Broth: Add the diced potatoes to the pot along with enough broth to just cover them. Reserve the remaining broth for later use. Bring the mixture to a boil, then simmer until the potatoes are soft when pierced with a fork.
- Prepare Soup Base: Use a slotted spoon to remove some of the cooked potatoes and set them aside. Add the softened cream cheese in pieces to the pot, then use an immersion blender to purée the soup until smooth.
- Combine and Season: Return the reserved potatoes to the pot. Season with additional salt and pepper to taste. Add more broth if you prefer a thinner consistency. Let the soup simmer for another 5-10 minutes to meld the flavors.
- Serve with Toppings: Ladle the soup into bowls and top with your choice of garnishes such as grated cheese, scallions, bacon, herbs, or any other favorite toppings.
