For the Sauce:
- 1 tablespoon olive oil
- 30 grams butter (2 tablespoons)
- 1/2 onion, finely chopped
- 3 garlic cloves, finely diced
- 1/2 teaspoon black pepper
- 70 grams tomato paste (1/4 cup)
- 3/4 cup cream
- 40 grams parmesan, finely grated
- 1 tablespoon lemon juice
- Salt to taste
For the Pasta:
- 200 grams dried pasta or 300 grams fresh pasta
Instructions
- Cook the Pasta: Boil a pot of heavily salted water and cook the pasta according to package instructions. Reserve a mug of pasta water before draining.
- Prepare the Sauce: Heat olive oil and butter in a frying pan. Add onions, cook until soft. Add garlic and pepper, then tomato paste. Stir in cream, lemon juice, and parmesan. Add cooked pasta to the sauce, simmer to thicken.
- Season and Serve: Taste the sauce, adjust seasoning with salt. Serve with extra parmesan, black pepper, and fresh basil.
Notes
- If draining pasta before sauce is ready, reserve a mug of pasta water to add to the sauce.
