Description

Ingredients

For the Sauce:

  • 1 tablespoon olive oil
  • 30 grams butter (2 tablespoons)
  • 1/2 onion, finely chopped
  • 3 garlic cloves, finely diced
  • 1/2 teaspoon black pepper
  • 70 grams tomato paste (1/4 cup)
  • 3/4 cup cream
  • 40 grams parmesan, finely grated
  • 1 tablespoon lemon juice
  • Salt to taste

For the Pasta:

  • 200 grams dried pasta or 300 grams fresh pasta

Instructions

  1. Cook the Pasta: Boil a pot of heavily salted water and cook the pasta according to package instructions. Reserve a mug of pasta water before draining.
  2. Prepare the Sauce: Heat olive oil and butter in a frying pan. Add onions, cook until soft. Add garlic and pepper, then tomato paste. Stir in cream, lemon juice, and parmesan. Add cooked pasta to the sauce, simmer to thicken.
  3. Season and Serve: Taste the sauce, adjust seasoning with salt. Serve with extra parmesan, black pepper, and fresh basil.

Notes

  • If draining pasta before sauce is ready, reserve a mug of pasta water to add to the sauce.
