For the Cream Sauce:
- 6 tablespoons butter
- 1/2 cup all-purpose flour
- 2 1/2 cups heavy cream
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- pinch white pepper
- 1/4 teaspoon smoked paprika
- 1/2 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon celery salt
For the Casserole:
- 2 cups frozen cauliflower
- 2 cups frozen broccoli
- 4 cups frozen mixed vegetables (carrots, corn, peas, etc.)
- 1 cup sour cream
- 2 cups shredded cheddar cheese, divided
- 2 cups french fried onions
- parsley for garnish (optional)
Instructions
- Preheat Oven: Preheat the oven to 350˚F.
- Make the Cream Sauce: Melt butter in a saucepan, whisk in flour, then slowly add heavy cream. Cook until thickened, then season with salt, peppers, paprika, onion powder, garlic powder, and celery salt. Remove from heat and stir in sour cream and 1 1/2 cups cheddar.
- Assemble the Casserole: Place frozen vegetables in a baking dish, pour the cream sauce over them, and mix well. Top with fried onions and remaining cheese.
- Bake: Bake in the preheated oven for 50 minutes or until the top is golden brown.
- Serve: Garnish with parsley before serving, if desired.
