Description

Crispy BBQ Roasted Chickpeas are a savory, crunchy snack that combines the natural creaminess of chickpeas with a smoky BBQ spice blend. Perfect for a quick snack or topping for salads, these roasted chickpeas are baked to crispy perfection with a touch of sweetness and smoky flavor, making them an irresistible guilt-free treat.

Ingredients

Scale

Chickpeas

  • 1, 15.5 oz. can low-sodium chickpeas (garbanzo beans) or 1.5 cups cooked chickpeas

Oil & Spices

  • 3 tablespoons avocado oil (or other neutral tasting oil – not olive oil or coconut oil)
  • 1 tablespoon maple sugar (or sub coconut sugar)
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • ½ teaspoon onion powder
  • 1 teaspoon fine salt

Instructions

  1. Preheat the oven: Set your oven to 375°F (190°C) and allow it to fully preheat to ensure even roasting of the chickpeas.
  2. Prepare chickpeas: Rinse the chickpeas thoroughly in a fine mesh strainer under cold water. Rub them gently with a kitchen towel while still in the strainer to remove the skins. Pinch the chickpeas to discard any remaining skins for maximum crispiness.
  3. Spread on skillet: Place the prepared chickpeas on a 12-inch cast iron skillet, ensuring they are in a single layer without overcrowding to promote even crisping. Use a second skillet or baking sheet if doubling the recipe.
  4. Toss with oil: Drizzle the avocado oil over the chickpeas and toss them well using two spoons so they are evenly coated. Spread out into an even layer for optimal roasting.
  5. Roast: Roast the chickpeas in the preheated oven for 35 minutes, shaking or tossing the skillet halfway through to ensure even crisping.
  6. Prepare spice blend: While roasting, whisk together the maple sugar, smoked paprika, garlic powder, chili powder, onion powder, and salt in a small bowl.
  7. Toss with spice blend: Once out of the oven, immediately sprinkle the spice mixture over the hot chickpeas and toss to coat thoroughly.
  8. Cool and crisp: Let the chickpeas cool in the skillet for 5-10 minutes, spreading them out to allow further crispiness. They can be served warm or at room temperature.
  9. Serve and store: Enjoy immediately for maximum crunch. Store leftovers at room temperature in an open container to keep them crispy.

Notes

  • Ensure chickpeas are thoroughly dried to achieve maximum crispiness.
  • Use a cast iron skillet or baking sheet for even roasting.
  • Adjust spice levels to taste by increasing or decreasing the smoked paprika or chili powder.
  • Best enjoyed fresh; reheating may soften the chickpeas.
  • For an extra smoky flavor, add a pinch of cayenne pepper or smoked chipotle powder.
