  • Juice from 1 small lemon (about 1 tablespoon)
  • 1 teaspoon vanilla paste or 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • Teeny pinch of ground cardamom
  • Teeny pinch of ground cloves

Topping:

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon kosher salt
  • 1/2 cup granulated sugar
  • 3/4 cup whole milk
  • 6 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla paste or 2 teaspoons vanilla extract

Instructions

  1. Preheat Oven and Prepare Dish: Preheat your oven to 350°F (175°C). Grease or butter a 9×6 inch baking casserole dish or a similarly sized dish to prevent sticking. Set it aside for later.
  2. Make the Filling: In a large mixing bowl, combine the sliced honey crisp apples and gala apples. Add brown sugar, granulated sugar, all-purpose flour, lemon juice, vanilla, ground cinnamon, ground ginger, ground cardamom, and ground cloves. Toss everything thoroughly until all the apple slices are evenly coated with the sugar, flour, and spices mixture. Transfer this filling mixture to the prepared baking dish, spreading it out evenly.
