Instructions
- Combine Ingredients: Add the diced shallots, minced garlic, Arborio rice, 2 ½ cups of vegetable broth, butter, salt, and black pepper into the rice cooker. Stir everything well to evenly distribute the ingredients.
- Set to Cook: Close the rice cooker and set it to the white rice setting. If your rice cooker does not have specific settings, simply start the cooking process as you normally would for white rice.
- Finish Risotto: Once the rice cooker completes the cycle, open the lid and stir in the lemon zest, lemon juice, frozen peas, grated Parmesan cheese, and add additional broth if the risotto appears too thick. Mix thoroughly to combine all flavors and warm the peas.
