- 2 English light whole wheat muffins, toasted
- 2 slices turkey bacon, cut in half (Applegate preferred)
- 2 slices cheddar cheese or American cheese
- 2 large eggs
- Salt and black pepper, to taste
- Optional condiments: hot sauce, ketchup, etc.
Instructions
- Toast Muffins and Melt Cheese: Open the English muffins and place a slice of cheese on each half. Toast them in a toaster oven or under the broiler about 6 inches from the flame until the cheese melts. Be careful not to burn the muffins.
- Cook Turkey Bacon: Spray a large skillet with olive oil spray and cook the turkey bacon according to package directions until crisp. Remove and set aside.
- Cook Eggs: Spray the skillet again with olive oil spray. Crack the eggs into the nonstick skillet and season with salt and black pepper. Cook over low heat, covered, until the yolks reach the desired doneness. For runny yolks, cook gently; alternatively, you can scramble the eggs if preferred.
- Assemble Sandwich: Place the cooked turkey bacon on one half of each English muffin and the cooked egg on the other half. Add optional condiments like hot sauce or ketchup if desired. Close the sandwich and serve immediately.
