Ingredients
Scale
Main Ingredients
- 6 cups rice krispie cereal
- One 10oz bag mini marshmallows
- 4 tbsp unsalted butter
Decoration Ingredients
- 10 oz green candy melts
- 3 oz black candy melts
- Royal icing eyes
- Black jimmies sprinkles
Instructions
- Prepare the dish: Butter a 9″ x 13″ casserole dish thoroughly to prevent sticking.
- Melt butter and marshmallows: In a large pot over low-medium heat, melt the butter. Add the mini marshmallows and stir continuously until fully melted and smooth.
- Mix cereal: Add the rice krispie cereal to the melted marshmallow mixture. Using a spatula, gently stir until the cereal is evenly coated with the marshmallow mixture.
- Press into dish: Spoon the mixture into the prepared casserole dish. Press it firmly and evenly until the mixture fills the dish and the top surface is flat.
- Allow to set: Let the mixture set at room temperature for 30 minutes to firm up.
- Cut treats: Remove the cooled rice krispie block from the dish and cut into rectangles of various sizes to form Frankenstein shapes.
- Melt green candy melts: Set a bowl over a small pot of boiling water as a double boiler and add the green candy melts. Stir until completely melted and smooth. If too thick, add a teaspoon of vegetable shortening to thin.
- Dip and decorate: Dip the top of each rice krispie treat into the melted green candy melts, then immediately dip into black jimmies sprinkles to create texture.
- Add eyes: Attach two royal icing eyes on each treat while the coating is still wet to secure them.
- Melt black candy melts: In a small microwave-safe bowl, melt the black candy melts in 10-15 second increments, stirring between each until smooth.
- Pipe stitches: Transfer melted black candy melts to a piping bag and pipe stitch patterns onto the treats to give them a Frankenstein look.
- Set completely: Allow all decorations to set fully before packaging or serving.
Notes
- Cook the marshmallow mixture over medium heat and remove from heat immediately once melted to avoid hard and overcooked bars.
- Keep all kitchen tools completely dry when melting candy melts or chocolate; moisture causes chocolate to seize.
- If you prefer chocolate over candy melts, substitute green candy melts with white chocolate tinted with green gel food coloring, and black candy melts with dark chocolate tinted with black gel food coloring.
- If you don’t have a double boiler, melt candy melts carefully in the microwave in 10-second increments to avoid burning.
- If melted chocolate or candy melts are too thick for dipping, thin by adding a small amount of vegetable shortening and stir until smooth.
- Store rice krispie treats in an airtight container at room temperature and consume within three days for best freshness.
