Strawberry Mousse
- 12 1/2 ounces strawberries (3/4 pound), cleaned and sliced
- 1/2 cup granulated sugar
- 1 cup cold heavy cream (or whipping cream with at least 30% fat content)
- Extra fresh strawberries for topping

- Prepare Strawberries: Clean and slice the strawberries thoroughly to ensure freshness and ease of blending.
- Make Strawberry Puree: In a blender or food processor, add the sliced strawberries and granulated sugar. Puree the mixture until smooth, then remove ½ cup of this puree and set aside for layering.
- Whip Cream: In a cold bowl, beat the cream using an electric mixer or whisk until stiff peaks form, ensuring a fluffy and stable mousse base.
- Combine Puree and Cream: Gently fold the remaining strawberry puree (all except the reserved ½ cup) into the whipped cream, mixing carefully to maintain the airy texture.
- Assemble Mousse: Divide the reserved ½ cup puree evenly among four small to medium glasses (approximately 1 cup size). Top each glass with the strawberry mousse mixture.
- Chill: Refrigerate the assembled mousse glasses for about 1 hour or overnight to allow it to set and flavors to meld.
- Serve: Before serving, garnish with fresh sliced strawberries on top for added freshness and presentation. Enjoy the dessert chilled.
Notes
- To use this mousse as a pie or cake filling, whip the cream until thickened and stir in the puree.
- For better setting, sprinkle 1 tablespoon of gelatin over 2 tablespoons of milk in a small pot, let stand for 1 minute, then heat gently on low until gelatin dissolves (about 1-2 minutes), do not boil.
- Remove from heat immediately, add 1-2 tablespoons of whipped cream mixture to gelatin and stir gently, then fold gelatin mixture into remaining whipped cream mixture.
