Description

A light and creamy strawberry mousse made with cream cheese or coconut cream, yogurt or additional cream cheese, and sweetened with powdered sugar. This easy no-bake dessert blends fresh strawberries for a fresh, fruity flavor and a smooth, airy texture, perfect for a quick and delightful treat.

Ingredients

Scale

Main Ingredients

  • 8 oz cream cheese or coconut cream
  • 4 oz yogurt or additional cream cheese or coconut cream
  • 1 cup powdered sugar or sugar free alternative
  • 5 medium size strawberries
  • Optional: 1/4 tsp vanilla bean paste

Instructions

  1. Prepare the cream base: If using cream cheese, let it come to room temperature for easier blending. If using coconut cream, open the can to ensure the contents are thick and creamy; discard if the texture is hard or flaky as it won’t work well for mousse.
  2. Prepare the strawberries: Remove the stems from the strawberries and puree them by blending or mashing until smooth.
  3. Blend the mousse: Add the room temperature cream cheese (or coconut cream), yogurt (or additional cream or cream cheese), powdered sugar, and optional vanilla bean paste to the pureed strawberries. Blend everything together in a food processor, blender, or using a hand mixer until the mixture is completely smooth and airy.
  4. Chill the mousse: Transfer the mousse into serving dishes and refrigerate. Allow it to chill for at least one hour to let it thicken considerably for a perfect mousse texture before serving.

Notes

  • Using room temperature cream cheese helps achieve a smoother mousse.
  • If using coconut cream, make sure it is well separated and creamy to avoid a gritty texture.
  • The mousse thickens best when chilled for at least an hour.
  • Powdered sugar can be substituted with a sugar-free alternative for a lower-sugar version.
  • Adjust the sweetness and vanilla to taste based on preference.
