For the Mashed Potato Balls:
- 2 green onions, diced
- 3 cups leftover mashed potatoes
- 1 1/2 cups shredded colby jack cheese
- 1 1/2 jalapeno, diced
- 1 cup crumbled cooked bacon
- Salt and pepper to taste
- 2 large eggs
- 1 1/2 cups panko bread crumbs
- 2–3 cups neutral oil for frying
Instructions
- Prepare the Mashed Potato Mixture: In a bowl, mix mashed potatoes with green onions, cheese, jalapeno, bacon, salt, and pepper.
- Coat the Potato Balls: Whisk eggs in a bowl and place bread crumbs in another. Shape mashed potato mixture into balls, coat in egg, then bread crumbs.
- Fry the Balls: Heat oil in a skillet. Fry potato balls until golden brown, turning occasionally for even cooking.
- Drain and Serve: Remove fried balls onto paper towels to drain excess oil. Serve hot with dipping sauces.
Notes
- For extra flavor, consider adding chopped herbs like parsley or chives to the mashed potato mixture.
- Make sure the oil is hot enough before frying to prevent the balls from absorbing excess oil.
