- 1 whole chicken (about 4 pounds), at room temperature, giblets and neck removed from cavity
- 1/4 cup unsalted butter, melted
- 3 tablespoons olive oil
- 1/4 cup white wine (optional)
- 1 lemon, halved
- Salt and pepper, to taste
- 2 tablespoons fresh parsley, chopped
- 4 cloves garlic, minced
- 1 head of garlic, peeled and cut in half horizontally
- 3 sprigs fresh rosemary
Instructions
- Preheat Oven: Preheat the oven to 430°F (220°C) and line a baking tray with foil or grease a roasting pan.
- Prepare Chicken: Remove excess fat and feathers from the chicken, pat dry with paper towels.
- Season Chicken: Combine olive oil, melted butter, wine, lemon juice, salt, pepper, and parsley. Rub minced garlic over the chicken.
- Stuff Chicken: Place garlic head, rosemary, and lemon inside the cavity. Tie the legs together.
