For the Lasagna:

  • 1 box of lasagna noodles (16 ounces)
  • 1 pound of large shrimp, peeled and deveined
  • 4 cloves of garlic, minced

  • 2 cups of milk (whole or 2%)
  • 1 cup of grated Parmesan cheese
  • 1 cup of shredded mozzarella cheese

For the Garlic Butter Sauce:

  • 1/2 cup of butter (unsalted)
  • 4 cloves of garlic, minced
  • 1/4 cup of chopped fresh parsley
  • 1 tablespoon of lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the lasagna noodles: Bring a large pot of salted water to a boil and cook the noodles according to package instructions until al dente. Drain and set aside.
  2. Sauté the shrimp: In a large skillet, melt 1/2 cup of butter over medium heat. Add the minced garlic and cook until fragrant, about 1-2 minutes. Add the shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
  3. Make the sauce: In the same skillet, melt another 1/2 cup of butter. Add minced garlic and cook until fragrant, about 1-2 minutes. Stir in the flour and cook for 1 minute, whisking constantly. Gradually add milk, whisking to remove lumps. Cook until the sauce thickens, about 5-7 minutes. Remove from heat and stir in Parmesan cheese until melted. Season with salt and pepper.
  4. Assemble the lasagna: Preheat oven to 375°F (190°C). Spread a thin layer of the garlic butter sauce over the bottom of a baking dish. Layer lasagna noodles, then spread some sauce over the noodles, add cooked shrimp, and sprinkle shredded mozzarella. Repeat layers until all ingredients are used, ending with a layer of sauce and topping with mozzarella cheese.
  5. Bake: Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10 minutes or until cheese is golden and bubbly.
