For the Soup:
- 1 1/2 cups plain yogurt
- 1/4 cup virgin olive oil
- 1 tablespoon lemon juice
- 1 jalapeño pepper, seeded and diced
- 1/2 cup chopped green onions
- 2 cups torn bread pieces (whole wheat, sourdough, or crusty bread)
- 2 cups chopped English cucumber
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 4 tomatillos, husked, rinsed, and diced
Instructions
- Prep the Ingredients: In a large bowl, whisk together yogurt, olive oil, and lemon juice. Add jalapeño, green onions, and bread, and let stand for 10 minutes.
