For the Sauce:

- ⅓ English cucumber, thinly sliced
- 1 medium avocado, sliced
- ⅔ cup alfalfa sprouts
Instructions
- Make the Green Goddess Sauce: In a small mixing bowl, combine Greek yogurt, mayonnaise, grated garlic, chopped chives, chopped tarragon, lemon zest and juice, olive oil, salt, and pepper. Whisk well to create a smooth, herbaceous sauce.
- Spread Sauce on Bread: Evenly spread about 2 tablespoons of the prepared sauce on each slice of whole-wheat bread to ensure a flavorful base for the sandwich ingredients.
- Assemble Sandwich Layers: On two of the bread slices, layer half of the arugula, followed by fresh mozzarella slices, thin cucumber slices, and avocado slices. Finally, top with alfalfa sprouts divided between both slices.
- Top the Sandwich: Place the remaining two slices of bread on top of the prepared slices with the sauce side down, gently pressing to close the sandwiches.
