Herbs & Spices

  • 1 tablespoon minced fresh sage
  • 1 tablespoon minced fresh thyme
  • 1 1/2 teaspoons crushed red pepper flakes
  • 1 1/2 teaspoons ground paprika
  • 1/4 teaspoon ground nutmeg

Garlic & Seasonings

  • 3 finely grated garlic cloves
  • 1 1/2 teaspoons packed light brown sugar
  • 1 1/2 teaspoons coarse salt
  • 1 teaspoon ground black pepper

Cooking Oil

  • 1 tablespoon cooking oil

Instructions

  1. Prepare the Meat: If grinding from scratch, trim the pork shoulder of excess fat and cut into 1-inch chunks. Chill in the refrigerator or freezer for 15-20 minutes to firm up the meat for grinding. If using pre-ground pork, skip to step 3.
  2. Grind the Pork: Run the cold pork chunks through a food grinder fitted with a medium-size die into a mixing bowl, or use pre-ground pork directly.
  3. Mix the Seasonings: Add the minced sage, thyme, crushed red pepper flakes, paprika, ground nutmeg, grated garlic, brown sugar, salt, and black pepper to the ground pork. Mix thoroughly until well combined and the spices are evenly distributed.
  4. Taste and Adjust: Fry a small patty of the sausage and taste to adjust seasonings if necessary.
  5. Form Patties: Shape the sausage mixture into small patties about 2½ to 3 inches in diameter.
  6. Cook the Sausages: Heat the oil in a non-stick or cast-iron skillet over medium heat. Fry the sausage patties for 3-4 minutes on each side until browned and cooked through.
  7. Serve: Remove and serve immediately while hot.

Notes

  • Ensure the pork is chilled before grinding to facilitate a cleaner grind and better texture.
  • Adjust spice levels to suit your taste by increasing or decreasing red pepper flakes or nutmeg.
  • Make sure not to overcrowd the pan to allow even browning.
