For the Miso Butter:
- 3 tbsp butter, divided
- 1 tbsp miso paste
For the Cabbage:
- 1 sweetheart (hispi) cabbage, cut into 4 wedges; pointed cabbage in the US
- 1/4 cup Panko breadcrumbs
- 1/4 tsp garlic powder
- 1 tbsp chopped parsley, optional
Instructions
- Preheat the oven: Preheat the oven to 200C/400F.
- Prepare the cabbage: Cut the cabbage into quarters.
- Make the miso butter: Mix 2 tbsp of softened butter with miso paste. Brush the mixture on the cabbage quarters.
- Roast the cabbage: Place the cabbage wedges on a baking sheet and roast in the preheated oven for 30-35 minutes until charred on the outside and slightly crispy.
- Prepare the breadcrumbs: In a pan, melt the remaining butter. Add breadcrumbs and garlic powder. Toast until golden, then remove from heat.
- Finish and serve: Sprinkle the roasted cabbage with breadcrumbs before serving. Optionally, garnish with chopped parsley.
