Description

This Mozzarella and Cheddar Stuffed Cheesy Bread is a delightful homemade treat featuring a soft, freshly kneaded dough generously filled with a savory blend of mozzarella, sharp cheddar, and parmesan cheeses spiced with garlic and parsley. After a two-hour rise, the bread is rolled, stuffed, folded, and baked to a golden crisp, then brushed with a flavorful garlic butter for an irresistible finish. Perfect as a snack, appetizer, or side, it pairs wonderfully with marinara sauce.

Ingredients

Scale

Dough

  • 2 ½ cups all purpose flour
  • 2 teaspoons sugar
  • ¾ teaspoon kosher salt
  • ¾ teaspoon instant yeast
  • 1 cup warm water

Cheese Mixture

  • 2 cups mozzarella cheese, shredded
  • 1 cup sharp cheddar cheese, shredded
  • 2 tablespoons parmesan cheese, grated
  • 1 teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ½ teaspoon dried parsley flakes

Garlic Butter

  • 4 tablespoons salted butter, melted
  • ½ teaspoon dried parsley flakes
  • 3 cloves garlic, minced

Instructions

  1. Prepare the dough: Use a stand mixer fitted with a dough hook and knead the flour, sugar, kosher salt, instant yeast, and warm water on low speed for 10 minutes until a smooth dough forms.
  2. Let dough rise: Cover the dough with plastic wrap and allow it to rest for 2 hours in a warm place, or until it doubles in size.
  3. Preheat oven and prepare cheese filling: Preheat your oven to 450°F (232°C). In a bowl, combine shredded mozzarella, sharp cheddar, parmesan, garlic powder, kosher salt, and dried parsley to make the cheese mixture. Set aside.
  4. Shape and fill dough: Punch down the risen dough and divide it into two equal pieces. On a lightly floured surface, roll each piece into a 10×8 inch rectangle. Spread about ¾ cup of the cheese mixture onto the long half of the rectangle, then fold the other half over the cheese and press the edges firmly to seal.
  5. Cut and add topping cheese: Place the filled dough pieces on a parchment-lined baking sheet. Using a pizza cutter or sharp knife, cut 8 one-inch strips across each piece. Sprinkle each piece generously with ¾ cup of the remaining cheese mixture.
  6. Bake the bread: Bake in the preheated oven for 10-12 minutes, or until the bread is golden brown and the cheese is melted and bubbly.
  7. Prepare garlic butter and brush: While baking, mix melted salted butter with minced garlic and parsley flakes. Once the bread is out of the oven, brush the garlic butter over the top generously.
  8. Serve: Serve the cheesy bread warm with extra garlic butter and marinara sauce on the side for dipping, if desired.

Notes

  • For best results, ensure your water is warm (not hot) to properly activate the yeast.
  • Using freshly grated cheeses enhances the flavor and melting quality.
  • You can add a pinch of red pepper flakes to the cheese mixture for a spicy kick.
  • Allow the bread to cool slightly before serving to avoid burning from melted cheese.
  • This bread is best enjoyed fresh but can be reheated in the oven to restore crispness.
