Potato Poppers:
- 3 lbs. baby gold potatoes (small ones)
- 2 tablespoons unsalted butter
- 6 garlic cloves, minced
- 2 tablespoons Whole Grain mustard
- 2 tablespoons honey
- 2 teaspoons Dijon mustard
- 1/2 teaspoon crushed chili flakes
- 3 tablespoons fresh chives, minced
- Kosher salt and freshly cracked black pepper, to taste
For Serving:
- 1/4 cup sour cream
Instructions
- Cook the Potatoes: Add potatoes to a large sauté pan with olive oil over medium-high heat, cover, and stir every 5 minutes until easily pierced with a knife, about 15-18 minutes.
- Prepare the Glaze: Add butter, minced garlic, and chili flakes to the pan. Cook for 30 seconds, stirring constantly.
- Add Mustard and Honey: Stir in Whole Grain mustard, Dijon mustard, and honey. Remove from heat and season with salt and pepper.
- Finish and Serve: Sprinkle fresh chives over the potatoes and serve with a side of sour cream for dipping.
