Instructions
- Sauté Vegetables: In a large pot, heat olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5 minutes until the vegetables are softened and aromatic.
- Add Garlic: Stir in the minced garlic and cook for an additional minute until fragrant, being careful not to burn it.
- Add Herbs and Broth: Sprinkle in the dried thyme and basil, then pour in the chicken broth. Bring the mixture to a boil.
- Simmer with Chicken and Gnocchi: Once boiling, reduce heat to a simmer. Add the shredded cooked chicken and the gnocchi. Cook for 5 to 7 minutes until the gnocchi float to the top and are tender.
- Finish Soup: Stir in the fresh spinach and heavy cream. Cook for another 2 to 3 minutes until the spinach wilts and the soup is heated through. Season with salt and black pepper to taste.
- Serve: Ladle the soup into bowls and garnish with grated Parmesan cheese if desired. Serve hot and enjoy!
