Description

Delicious and easy-to-make Orange Coconut Snowballs combining the zesty brightness of orange juice concentrate with the crunch of pecans and the tropical flavor of coconut. These no-bake treats are perfect for parties, holidays, or a sweet snack anytime.

Dry Ingredients

  • 1 12oz box vanilla wafer cookies (see notes)
  • 1 1/4 cup pecans
  • 2 cups coconut flakes (sweetened or unsweetened depending on your preference)
  • 2 cups powdered sugar

Wet Ingredients

  • 3/4 cup orange juice concentrate, mostly thawed (about 6 oz)
  • 1/2 tsp vanilla extract
  • 1 stick unsalted butter, softened


Instructions

  1. Process Vanilla Wafers: In a food processor, pulse the vanilla wafers into a very fine crumb. Transfer these crumbs to a mixing bowl.
  2. Process Pecans: Pulse the pecans in the food processor until a fine crumb is achieved and add them to the same mixing bowl with the wafer crumbs.
  3. Chop Coconut: Pulse the coconut flakes in the food processor just until coarsely chopped, then transfer them into a separate shallow dish for rolling later.
  4. Combine Ingredients: Add the powdered sugar, orange juice concentrate, vanilla extract, and softened butter to the bowl containing the pecan and wafer crumbs. Using a hand mixer, mix everything until fully combined into a dough-like consistency.
  5. Form Snowballs: Use a small cookie scoop or spoon to portion out the dough. Shape each scoop into a ball using your hands.
  6. Coat with Coconut: Roll each formed ball in the chopped coconut flakes ensuring each is well coated, then place them on a cookie sheet.
  7. Chill and Store: Refrigerate the cookie sheet with the snowballs until firm, about 30 minutes. Once firm, transfer the snowballs to a storage container and keep refrigerated to maintain freshness.

Notes

  • If you only find 11oz boxes of vanilla wafers, add 2-3 sheets of graham crackers crushed to make up the difference in volume.
  • Alternatively, use an extra 1/3 cup of powdered sugar to compensate, but this will increase the sweetness of the snowballs.
  • You may also buy two boxes of vanilla wafers and use the extra for other recipes like banana pudding.
