BBQ Sauce Mixture

- 12 bone-in, skin-on chicken thighs
- 1 tsp. kosher salt
- 1/2 tsp. ground black pepper
Instructions
- Prepare the BBQ sauce: In a medium saucepan, combine the BBQ sauce, peach preserves, grated garlic, and optional hot sauce. Heat over medium heat for 5 to 10 minutes, stirring occasionally, until the mixture is hot and well combined. Then set aside.
- Preheat the oven: Heat your oven to 400°F (204°C) to prepare for roasting the chicken.
- Prep the baking sheets and chicken: Drizzle olive oil on two foil-lined rimmed baking sheets to prevent sticking. Place the chicken thighs skin-side down in the pans. Season evenly with kosher salt and ground black pepper.
- Initial roasting: Roast the chicken in the oven for 25 minutes to start cooking the thighs through.
- First sauce application and flipping: Remove the chicken briefly from the oven. Brush the BBQ sauce mixture all over the thighs, then carefully flip them over to the other side using a spatula, ensuring the skin stays intact. Brush the tops with more sauce.
- Second roasting: Return the chicken to the oven and roast for 7 minutes. Remove the chicken and brush on additional sauce.
- Third roasting: Put the chicken back in the oven and roast for another 7 minutes. Once again, remove and brush the thighs with more sauce.
- Final roasting at higher heat: Turn up the oven temperature to 425°F (218°C). Continue roasting the chicken for another 5 to 7 minutes until the BBQ sauce starts to brown around the edges and the chicken is thoroughly cooked through.
- Rest before serving: Remove the chicken from the oven and let it rest for at least 10 minutes. This helps the juices redistribute, ensuring tender, juicy chicken.
