  • 1 cup Unsalted butter
  • 1 tsp Vanilla extract
  • 1 tsp Ground cinnamon (divided)

Cinnamon Sugar Topping

  • 3 tbsp Granulated sugar
  • 3/4 tsp Kosher salt
  • 1 tsp Ground cinnamon (from the divided amount)


Instructions

  1. Preheat and Prepare Baking Sheet: Preheat your oven to 350°F (175°C). Line an extra-large rimmed baking sheet with aluminum foil and then parchment paper to prevent sticking.
  2. Arrange Crackers and Mix Topping: Spread the oyster crackers in a single layer on the prepared baking sheet. In a small bowl, mix 1 teaspoon of ground cinnamon, granulated sugar, and kosher salt; set aside for later sprinkling.
  3. Make Toffee Sauce: In a small heavy-bottomed saucepan, combine the unsalted butter and dark brown sugar. Heat over medium heat, bringing the mixture to a boil while stirring occasionally. Allow it to boil for 2 minutes to thicken.
  4. Add Flavorings: Remove the saucepan from heat and stir in the vanilla extract and remaining 1 teaspoon of ground cinnamon until fully incorporated.
  5. Coat Crackers and Bake: Pour the hot toffee mixture evenly over the oyster crackers, gently tossing or stirring on the baking sheet to coat all crackers well. Bake in the preheated oven for 10 minutes until the coating is bubbly and golden.
