For the Cookie Dough:
- 1/2 cup unsalted butter, room temperature
- 2/3 cup packed light brown sugar
- 1 large egg, room temperature
- 1/2 teaspoon vanilla extract
- 1 1/3 cups all-purpose flour
- 1 large egg white, room temperature
- 1 teaspoon water
- 1 1/2 cups salted peanuts, chopped
For the Filling:
- 1/2 cup creamy peanut butter
For the Drizzle:
- 3 ounces white chocolate
- 1 teaspoon vegetable oil
Instructions
- Cream butter and sugar: Cream butter and sugar together until light and fluffy, about 4 minutes.
- Add egg and vanilla: Mix in the egg and vanilla until well combined.
- Add flour: Gradually add in the flour on low speed.
- Chill dough: Refrigerate the dough for 1 hour.
- Preheat oven and prepare baking sheets: Preheat oven to 350°F and line baking sheets with parchment paper.
- Coat dough: Dip dough balls in egg white-water mixture, then roll in peanuts.
- Make indentation and add filling: Press an indentation in each cookie and fill with peanut butter.
- Bake: Bake for 12-13 minutes, then cool on a wire rack.
- Drizzle: Melt white chocolate and oil, then drizzle over cooled cookies.
