These Payday Cookies are a delightful treat that combines the rich flavors of peanuts, creamy peanut butter, and white chocolate. Perfect for peanut lovers!

For the Cookie Dough:

  • 1/2 cup unsalted butter, room temperature
  • 2/3 cup packed light brown sugar
  • 1 large egg, room temperature
  • 1/2 teaspoon vanilla extract
  • 1 1/3 cups all-purpose flour
  • 1 large egg white, room temperature
  • 1 teaspoon water
  • 1 1/2 cups salted peanuts, chopped

For the Filling:

  • 1/2 cup creamy peanut butter

For the Drizzle:

  • 3 ounces white chocolate
  • 1 teaspoon vegetable oil

Instructions

  1. Cream butter and sugar: Cream butter and sugar together until light and fluffy, about 4 minutes.
  2. Add egg and vanilla: Mix in the egg and vanilla until well combined.
  3. Add flour: Gradually add in the flour on low speed.
  4. Chill dough: Refrigerate the dough for 1 hour.
  5. Preheat oven and prepare baking sheets: Preheat oven to 350°F and line baking sheets with parchment paper.
  6. Coat dough: Dip dough balls in egg white-water mixture, then roll in peanuts.
  7. Make indentation and add filling: Press an indentation in each cookie and fill with peanut butter.
