Description

Bacon:

  • 46 strips bacon, cut into 1-inch pieces

Potato Mixture:

  • 20 oz refrigerated potatoes or 3-4 cups frozen hash browns
  • 1/2 cup sweet onion, diced (optional)
  • 1/2 cup red bell pepper, diced (optional)

Additional Ingredients:

  • 810 sausage links, cooked and chopped
  • Salt and pepper, to taste
  • 4 eggs
  • 1 cup shredded cheddar cheese or your favorite

Instructions

  1. Cook Bacon: In a large skillet or cast iron skillet, cook bacon until crispy and remove from pan onto a paper towel.
  2. Cook Potatoes: Add potatoes to the skillet and cook until browned.
  3. Add Vegetables: If using, add diced sweet onion and red bell pepper to the skillet and cook until tender, about 5 minutes.
  4. Incorporate Sausage and Bacon: Stir in chopped sausage and bacon, heating through.
  5. Season: Add salt and pepper to taste.
  6. Add Eggs: Make wells in the pan and carefully break eggs into each well.
  7. Cook Eggs: Cover the pan and cook over medium-low heat until the egg whites are set, about 8-10 minutes.
  8. Add Cheese: Sprinkle the skillet with cheese and cook until melted.
  9. Serve: Serve immediately with sliced green onions, tomatoes, avocado, jalapenos, and parsley.
