- 1 medium acorn squash
- 2 tablespoons butter, divided
- 2 tablespoons maple syrup, divided
- 1 pinch salt
Instructions
- Preheat the oven: Preheat the oven to 425ºF.
- Prepare the acorn squash: Cut the acorn squash in half, scoop out the seeds and membranes, and place cut side up on a baking sheet. Sprinkle with salt.
- Add butter and maple syrup: Place a pat of butter and drizzle 1 tablespoon of maple syrup in the cavity of each squash half.
- Roast the squash: Roast for 15 minutes, then baste with the melted maple butter mixture. Roast for an additional 25-35 minutes until the flesh is soft and browned.
- Serve: Remove from the oven, let it rest for a few minutes, and then serve.
