Italian Summer Soup:
- 2 lbs ground Italian sausage
- 2 carrots, chopped
- 2 stalks celery, chopped
- 1 white onion, diced
- 1 bell pepper, diced
- 2–3 small zucchinis, diced
- 1 (15.5 oz) can diced tomatoes
- 1 (15 oz) can cannellini beans, drained and rinsed
- 4 cups chicken or vegetable broth
- 1 tablespoon garlic powder
- 1 tablespoon Italian seasoning
- 1 teaspoon red pepper flakes
- Salt and black pepper to taste

- 3/4 cup shredded parmesan cheese for serving
Instructions
- Cook the Italian Sausage: In a large skillet over medium heat, cook the Italian sausage until mostly browned. Drain off excess grease.
- Prepare the Soup: Transfer the cooked sausage to a slow cooker. Add in the chopped vegetables, diced tomatoes, cannellini beans, broth, garlic powder, Italian seasoning, red pepper flakes, salt, and black pepper. Stir to combine.
- Cook in the Slow Cooker: Cover the slow cooker and set it to high for 4-5 hours or low for 6-8 hours, allowing the flavors to meld together.
- Serve: Once ready, serve the soup hot, garnished with shredded parmesan cheese and additional red pepper flakes for an extra kick.
