For the Sweet Potato Fries
- 4 sweet potatoes or yams
- 2 Tablespoons vegetable oil

For the Chipotle Lime Dip
- 1 1/4 cups mayonnaise
- 1/2 lime, juiced
- 1 teaspoon ground chipotle powder
- 1/2 teaspoon chili powder
- 1/4 teaspoon paprika
- 1/4 teaspoon cumin
- 1/4 teaspoon garlic powder
Instructions
- Prepare the Chipotle Lime Dip: In a small bowl, combine mayonnaise, freshly squeezed lime juice, ground chipotle powder, chili powder, paprika, cumin, and garlic powder. Mix well until smooth. Refrigerate for at least one hour to allow the flavors to meld.
- Preheat the Oven: Set your oven to 400°F (200°C) to get it ready for baking the sweet potato fries.
- Cut and Oil the Sweet Potatoes: Peel (if desired) and slice the sweet potatoes into long sticks resembling fries. Place them in a large Ziploc bag, add just enough vegetable oil to lightly coat all pieces, seal the bag, and gently toss to distribute the oil evenly.
- Arrange and Bake: Spread the oiled sweet potato sticks in a single, even layer on a cookie sheet to ensure they bake evenly and become crispy. Bake in the preheated oven for 35 to 45 minutes, turning the fries frequently to promote even browning.
- Season and Serve: Remove the fries from the oven once they are lightly browned and crispy on the edges. Immediately sprinkle Kosher salt to taste. Serve warm alongside the chilled chipotle lime dipping sauce for dipping.

- Make Ahead: Prepare the dipping sauce up to a day in advance and keep it refrigerated in an airtight container to deepen its flavor.
