These Baked Sweet Potato Zucchini Tots are a healthy and delicious snack or side dish made from grated zucchini and mashed sweet potatoes, seasoned with garlic powder, salt, and pepper, then baked to golden perfection. Instructions

  1. Preheat and prepare baking tray: Preheat your oven to 160°C (350°F) and line a baking tray with baking paper to prevent sticking and ensure even cooking.
  2. Remove moisture from zucchini: Use your hands to squeeze out all the moisture from the grated zucchini. This step is essential to avoid soggy tots and helps the mixture hold together better.
  3. Combine ingredients: In a mixing bowl, combine the drained zucchini, mashed sweet potato, garlic powder, sea salt, black pepper, and coconut flour. Mix thoroughly until all ingredients are evenly incorporated.
  4. Form tots: Using a tablespoon, scoop the mixture and form tot-sized mounds with your hands. Place each tot onto the prepared baking tray, spaced slightly apart.
  5. Bake: Place the baking tray in the preheated oven and bake for 30-35 minutes, or until the tots are slightly golden brown on the outside.

Notes

  • These tots freeze well. Freeze uncooked tots separated on a tray first, then transfer to a large zip-lock bag to prevent sticking. They can be frozen for up to 3 months.
