Pasta:
- 200 grams dried pasta or 300 grams fresh pasta
Chicken:
- 1 chicken breast
- 1 tablespoon flour
- 1 tablespoon olive oil
Cream Sauce:
- 1 tablespoon butter
- 3 garlic cloves, finely chopped
- 1 tablespoon fresh rosemary leaves, roughly chopped
- 3/4 cup cream
- 1 teaspoon black pepper
- 1 tablespoon lemon juice
- 50 grams parmesan, finely grated
To Garnish:
- Lemon zest
- Extra rosemary leaves
Instructions
- Cook the Pasta: Boil the pasta in salted water until slightly undercooked. Reserve a cup of pasta water before draining.
- Prepare the Chicken: Flatten the chicken breast, season with salt and pepper, dust with flour, and fry in olive oil until cooked through. Set aside.
- Make the Cream Sauce: Fry garlic in butter, then add rosemary, cream, parmesan, pepper, and lemon juice. Simmer and thicken with pasta water.
- Combine: Add cooked pasta to the sauce, toss, and let simmer briefly. Serve with sliced chicken on top.
- Garnish: Top with rosemary, lemon zest, and extra parmesan.
