Description

This classic casserole combines hearty potatoes, seasoned ground beef, vegetables, and creamy soups, topped with melted Cheddar cheese for a comforting, family-friendly dish perfect for a cozy dinner or potluck.

Ingredients

Units Scale

Potatoes

  • 8 large potatoes, peeled and chopped

Meat and Vegetables

  • 1 pound lean ground beef
  • 1/2 cup chopped onion
  • 1 (15 ounce) can carrots, drained
  • 1 (15 ounce) can green beans, drained

Sauces and Toppings

  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 1 (10.5 ounce) can condensed tomato soup
  • 3/4 cup shredded Cheddar cheese

Instructions

  1. Preheat oven: Set your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish to prevent sticking.
  2. Prepare potatoes: Bring a large saucepan of salted water to a boil. Add the peeled and chopped potatoes and cook until tender but still firm, about 15 minutes. Drain and mash the potatoes until smooth. Set aside.
  3. Cook beef and onions: While potatoes are cooking, combine the ground beef and chopped onion in a large skillet over medium-high heat. Cook and stir until the beef is evenly browned and crumbly, and the onions are tender, about 7-10 minutes. Drain any excess fat.
  4. Mix vegetables and soups: Stir in the drained carrots, green beans, condensed cream of mushroom soup, and condensed tomato soup into the cooked beef mixture. Mix until well combined.
  5. Assemble casserole: Transfer the beef and vegetable mixture into the prepared baking dish. Spread the mashed potatoes evenly over the top of the mixture and sprinkle the shredded Cheddar cheese over the potatoes.
  6. Bake: Place the casserole in the preheated oven and bake until the topping is light golden brown, about 30 minutes. Remove from oven and let cool slightly before serving.

Notes

  • Feel free to add your favorite vegetables, such as peas or corn, to customize the casserole.
  • For an extra cheesy flavor, sprinkle additional shredded cheese on top before baking.
  • You can prepare the casserole ahead of time, refrigerate, and bake later; adjust baking time accordingly.
  • Use lean ground beef or turkey for a lower fat option.
