For Crispy Chicken
- 500g lean ground chicken (preferably processed from chicken breast)
- 1 large egg
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 1/2 tsp cayenne pepper

Flour Station
- 100g plain flour
- Additional seasonings: 1 tsp garlic powder, 1 tsp onion powder, 1 tsp paprika, 1/2 tsp cayenne, 1 tsp salt, 1 tsp black pepper
Wet Station
- 1 beaten egg
Hot Honey Dip (optional)
- 15g unsalted butter
- 3 tbsp Frank’s Red Hot Sauce
- 1 tbsp honey
- Chili flakes to taste
Instructions
- Prepare the Seasoned Chicken: In a large mixing bowl, combine the ground chicken, egg, garlic powder, onion powder, paprika, cayenne, salt, and black pepper. Mix until well incorporated. Then, shape the mixture into nugget-sized pieces using your hands or a small scoop.
- Flour Station: Mix the plain flour with the same seasonings used for the chicken. Divide the seasoned flour into two bowls, with 40g in one and the rest in the other.
- Wet Station: Beat the egg thoroughly in a small bowl.
- Coating the Nuggets: Lightly coat each nugget in the flour from the 40g bowl. Dip the floured nuggets into the beaten egg, then dredge again in the remaining seasoned flour for extra crunch.
- Baking the Nuggets: Preheat oven to 400°F (200°C). Arrange the coated nuggets on a parchment-lined baking sheet. Bake for 15-20 minutes, turning once halfway through, until golden brown and cooked through.
- Prepare the Hot Honey Dip (optional): Melt butter in a small saucepan over medium heat. Stir in Frank’s Red Hot Sauce, honey, and chili flakes. Heat until combined. Serve in a small bowl alongside the nuggets.

- Keeping the chicken mixture cold helps maintain the shape and texture of the nuggets.
- Make sure to make the nuggets uniform in size for even cooking.
- Let the coated nuggets rest for a few minutes before baking to improve coating adhesion.
- For extra crispiness, place the nuggets on a wire rack on top of the baking sheet during baking.
