Ingredients
Scale
Coconut Snowmen Truffles
- 320g (11.25 oz) dairy-free sweetened condensed milk, 1 regular can
- 4 cups (320g) fine shredded coconut / desiccated coconut, plus extra for rolling
To Decorate
- 3 tablespoons vegan white chocolate or white candy melts, melted and as needed
- 3 tablespoons black-colored icing, as needed
- 2 tablespoons orange-colored icing, as needed
- 24 thin pretzel sticks, 2 inches (5 cm) each
- 12 red candy straps, 5 inches (13 cm) each
Instructions
- Mix the coconut mixture: In a large mixing bowl, combine the shredded coconut and dairy-free sweetened condensed milk. Mix thoroughly using a wooden spoon or hand mixer until the mixture is well combined and sticky enough to shape.
- Shape the snowmen: Divide the mixture into approximately 12 larger balls and 12 smaller balls, representing the bodies and heads of the snowmen. Roll each ball tightly, then roll them in extra shredded coconut to coat.
- Assemble the snowmen: Pair each larger ball with a smaller ball. Dab some melted vegan white chocolate on the larger balls and carefully stick the smaller balls on top to form the snowmen. Allow them to firm up at room temperature or in the refrigerator.
- Decorate the snowmen: Using piping bags or toothpicks, apply black icing to create eyes and buttons on the snowmen. Use orange icing to add the noses. If desired, insert pretzel sticks on the sides as arms and wrap each snowman’s neck with a red candy strap. Use melted white chocolate as glue to secure decorations if needed.
- Storage: Store the assembled snowmen truffles in an airtight container at room temperature for up to 1 day, refrigerated for up to 1 week, or frozen for up to 1 month. Note that pretzel sticks may soften over time.
Notes
- The number of snowmen depends on how large you roll your coconut truffles.
- If sweetened condensed milk is unavailable, substitute with 1 cup (240g) thick scoopable coconut cream and 1/4 cup (85g) maple syrup; the mixture will be less sticky and may require additional coconut or maple syrup.
- Because the coconut surface is textured, icing does not always stick perfectly; after piping each dot, lightly press or scrape next to it to help it adhere better. Imperfections add to the charm—don’t stress about perfect details.
