Ingredients

Units Scale

For the Peanut Butter Mousse

  • 350 grams silken tofu
  • 3-4 tbsp smooth peanut butter to taste
  • 3-4 tbsp agave syrup (or maple syrup or powdered sugar) to taste
  • 1 tsp vanilla paste or extract
  • 1 pinch salt
  • For the Chocolate Ganache

  • 100 grams 70% dark chocolate chips
  • 400 grams full-fat coconut milk (the thick creamy part at the top)

  • Instructions

    1. Prepare the mousse: In a blender, combine the silken tofu, peanut butter, agave syrup, vanilla extract, and salt. Blend until smooth and creamy. Taste and adjust sweetness or peanut butter according to preference.
    2. Chill the mousse: Spoon the mixture into ramekins or jars. Cover with plastic wrap and refrigerate while preparing the ganache.
    3. Melt the chocolate: In a microwave-safe bowl, melt the dark chocolate chips in 30-second intervals, stirring after each, until smooth. Alternatively, melt over a double boiler on the stovetop.
    4. Add coconut milk: Stir the thick coconut cream into the melted chocolate, whisking until well combined. It may look slightly separated initially but will become smooth.
    5. Assemble: Pour the ganache over the chilled peanut butter mousse. Return to the refrigerator and let set for about 1 hour.
    6. Serve: Once set, serve chilled, and enjoy this rich, vegan dessert.

    Notes

    • Ensure the coconut milk is well refrigerated so the cream separates easily from the liquid.
    • You can substitute maple syrup or powdered sugar for agave to suit your taste.
    • Using a high-quality dark chocolate makes the ganache richer and more flavorful.
    • This dessert can be made a day in advance and kept refrigerated.
    • Garnish with chopped nuts or a sprinkle of cocoa powder if desired for extra flair.
