Ingredients
1/2 tablespoon butter
2 tablespoons shredded cheddar cheese
1 egg
1/4 teaspoon black pepper
1/4 teaspoon kosher salt
1 small tortilla
2 tablespoons smashed avocado
2 tablespoons microgreens for garnish, optional
Instructions
- Heat the Pan: Heat a small fry pan or skillet over medium heat. Add the butter, melt it, and then swirl the pan to coat the entire bottom of the pan.
- Melt Cheese: Sprinkle the shredded cheese around the perimeter of the pan, and cook uncovered for 1 minute until melted and starting to get crispy.
- Cook the Egg: Crack the egg into a bowl. Separate the egg yolk, pour the egg white into the center of the pan, and cook uncovered for 30-60 seconds. Add the egg yolk, season with salt and pepper, cover, and cook for 30-60 seconds until the cheese is crispy and the egg whites are cooked.
- Prepare Tortilla: Warm the tortilla over your gas stove or in the oven/microwave. Top with smashed avocado.
- Assemble Taco: Place the crispy cheese fried egg on the tortilla. Add microgreens or preferred toppings.
