For the Orzo:
- 1 1/2 cups dry orzo
- Salt
For the Dressing:
- 1 Tbsp fresh lemon zest
- 2 Tbsp fresh lemon juice
- 1 1/2 Tbsp extra virgin olive oil
- 2 tsp honey
For the Salad:
- 5 cups cubed seedless watermelon (dice into 1/2 to 3/4-inch cubes)
- 6 oz feta cheese, crumbled
- 1/4 cup (12g) chopped fresh basil
Instructions
- Cook the Orzo: Cook pasta in salted water according to directions listed on package. Drain well (don’t rinse!) then pour into a large bowl.
- Prepare the Dressing: While pasta boils, stir together lemon zest, lemon juice, olive oil, and honey. Pour half of the mixture over drained pasta in the bowl and toss. Season with salt to taste. Allow to cool.
- Assemble the Salad: Add watermelon, feta, and basil to orzo, add the remaining lemon juice mixture, and toss to evenly coat.
