Description

  • 180g white chocolate, chopped
  • 80ml (1/3 cup) thickened cream
  • 1 tsp vanilla bean paste (optional)
  • 40g (1/4 cup) dried cranberries, chopped
  • 40g (1/4 cup) pistachios, chopped

Coating

  • 35g (1/3 cup) desiccated coconut


Instructions

  1. Melt the chocolate and cream: Place the chopped white chocolate and thickened cream in a heatproof bowl set over a saucepan of simmering water, ensuring the bowl does not touch the water. Stir gently with a metal spoon until the chocolate is fully melted and the mixture is smooth. If using, stir in the vanilla bean paste. Set the mixture aside to cool slightly.
  2. Incorporate cranberries and pistachios: Stir the chopped dried cranberries and pistachios into the melted chocolate mixture. Transfer to the refrigerator and chill for about 3 hours, stirring occasionally, until firm enough to handle but still slightly sticky.
  3. Form and coat truffles: Place the desiccated coconut in a shallow dish. Using level tablespoons, roll the chilled mixture into balls and then roll each ball in the coconut to coat thoroughly. Arrange the truffles in a single layer inside an airtight container. Store in the refrigerator until ready to serve.

Notes

  • Ensure the bowl doesn’t touch the simmering water to prevent the chocolate from burning.
  • Chilling the mixture for the full 3 hours is important for easier rolling of the truffles.
