Description

Zucchini Fries:

  • 2 large zucchinis
  • 2 large eggs
  • 2 cups panko bread crumbs
  • 1/2 cup finely grated parmesan cheese
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instructions

  1. Preheat the oven: Preheat the oven to 200C/400F. Line a large baking sheet with parchment paper and set aside.
  2. Slice zucchini: Slice zucchinis into thin matchsticks. In a small bowl, whisk eggs until combined. In a separate bowl, mix breadcrumbs, parmesan cheese, salt, and pepper.
  3. Dip and coat: Dip zucchini in egg mixture, then coat with breadcrumb mixture. Place on the baking sheet. Repeat until all zucchini is used.
  4. Bake: Bake for 22-25 minutes, turning regularly for crispiness. Remove from oven and serve hot.

Notes

  • You can use seasoned panko breadcrumbs for additional flavor.
  • For extra crispiness, you can spray the fries with cooking oil before baking.
