Zucchini Fries:
- 2 large zucchinis
- 2 large eggs
- 2 cups panko bread crumbs
- 1/2 cup finely grated parmesan cheese
- 1 teaspoon salt
- 1 teaspoon pepper
Instructions
- Preheat the oven: Preheat the oven to 200C/400F. Line a large baking sheet with parchment paper and set aside.
- Slice zucchini: Slice zucchinis into thin matchsticks. In a small bowl, whisk eggs until combined. In a separate bowl, mix breadcrumbs, parmesan cheese, salt, and pepper.
- Dip and coat: Dip zucchini in egg mixture, then coat with breadcrumb mixture. Place on the baking sheet. Repeat until all zucchini is used.
- Bake: Bake for 22-25 minutes, turning regularly for crispiness. Remove from oven and serve hot.
Notes
- You can use seasoned panko breadcrumbs for additional flavor.
- For extra crispiness, you can spray the fries with cooking oil before baking.
